Madécasse Chocolate
Founded by ex-Peace Corps volunteers, Madécasse is an inspiring enterprise that makes bean-to-bar chocolate in Madagascar. The bars are sourced and produced within the African country, even the colorful paper wrappers. The cacao farmers are paid four times above fair trade prices for their beans, jobs are created locally and we get to taste good chocolate. It's a total win-win for everyone.
Some of my favorite bars are the Arabica Coffee (44% cocoa) and Sea Salt & Nibs (63%). If you like spice, the 63% Pink Pepper & Citrus has a medium burn while Cinnamon & Sakay is slightly warmer. The Exotic Pepper is blended with Tsiperifery pepper, lending a faint floral overtone - I really enjoyed this one.
If you like plain dark chocolate, the super fruity 70% Cocoa is a good place to start. I would have liked a smoother texture, but if you're not as picky as I am this is a pretty good bar. I really wanted to like the 44% Milk Chocolate but the caramel notes overpowered the cacao, giving it a slightly savory finish.
