Vieux Carré Absinthe
Ever since absinthe was legally reintroduced in the U.S. three years ago, every spirits connoisseur has dashed off to experience La Fée Verte. Vieux Carré Absinthe, in particular, is crafted by Philadelphia Distilling. Along with the distinctive grande and petite wormwood, sweet fennel, and green anise, they also added star anise, melissa, spearmint, hyssop and the Swiss flower genepi. The gorgeous green tone is derived naturally from these herbs. And, that bottle design is so pretty.
This is a fun introduction to absinthe if you've never had it before. The herbal profile isn't as heavy on the licorice so it's lighter and you can mix it with or without sugar, at three parts water to one part Vieux Carré. Here's a sweet and girly recipe to try at home:
Vieux Carré French Toast

1/2 oz of Woodford Bourbon
2 bar spoons of Vieux Carré Absinthe
1 oz egg white
1 bar spoon of vanilla simple syrup
1 oz of maple simple syrup
pinch powdered sugar
pinch cinnamon
Combine Woodford, Vieux Carré, vanilla syrup, egg white, maple simple syrup, and cinnamon in a shaker tin, and dry shake first. (This will help get a huge, foamy head on the cocktail.) Add ice and shake vigorously.
Strain into a Marie Antoinette glass, and dust with powdered sugar. Garish with a few specks of cinnamon
in one spot...the contrast is really nice. Enjoy!
