TCHO SeriousMilk Chocolate & TCHOPro Baking Drops
It's about time Americans made a respectable, grown-up milk chocolate bar. I've always been a fan of Bonnat's luxurious blends but I was delighted to learn about SeriousMilk, TCHO's ambitious and successful line of milk chocolate. I am a tiny bit biased since the company is based in SF, but can you blame me? They make great stuff.
There are two types - Classic (39% Cacao) and Cacao (53% Cacao). I loved both but I prefer Cacao hands down. The Classic, with tons of voluptuous caramel and butterscotch notes, was a touch too sweet for me. That's actually a good thing because I can sorta exercise portion control. Alas, I can inhale the rich and sophisticated Cacao within minutes, which is perilous for my unforgiving skinny jeans. Another tidbit you might find interesting - their Chief Chocolate Maker Brad Kintzer used to work at Scharffen Berger.
I also tried their excellent TCHOPro Baking Drops. They offer an Organic Blend (66% Cacao) and a Conventional Blend (68% Cacao). I naturally gravitated towards the organic chocolate drops but I actually preferred the conventional blend. The regular drops had subtle nuances of red berries, which bounced off the palate so wonderfully. The acidity is low and there's a slight tantalizing caramel finish. The fair-trade organic drops are extremely smooth and bright, with an intense but balanced flavor. It's absolute perfect for a fudgy brownie recipe.
